The Very Berry Banana Trifle

Over New Year I made a beautiful trifle that I want to share with you. I’ve been making trifles for years, the simple ones; cake, fruit, more cake, more fruit & topped with custard & cream.

This one is a bit special though.

It’s inspired by Heston 🙂 Did you watch the Masterchef Australia episode when he had the contestants make the Royal Jubilee Trifle? It looked amazing! & so elegant!

The ideas for adding a strawberry compote & a shortbread for crunch were amazing.

The crystallized petals, jellys & such however are all too dainty for my taste so I only incorporate the ideas of the compote & shortbread.

It takes a bit of time to get everything ready, so I make the compote & custard and semi-assemble on one day (the flavors develop more when it stays over night) and then make the cream and shortbread the next day. I only add the shortbread & cream layer a few hours before I serve it.

It’s yummy & delicious and full of taste & texture!

Memories of Alex with a side of Parfait…

The family and I spent the first few days in Alex. I’d always wanted to go in winter even though it is cold and windy and probably rainy. Thing is, it wasn’t. Windy a bit while walking down the corniche, but no fierce waves crashing, nor rain and the cold was ok once you got a warm jacket on you. My always to do when in Alex are a seafood dinner at 3arouss elbahr (the mermaid) and coffee at elbonn elbrazeelee (Brazilian Coffee house).

3arous elbahr has excellent fresh seafood, nicely prepared, and tastes great. It’s not a fancy place but it’s clean and well kept. The ceilings are all painted with underwater images and mermaids on rocks, not great but interesting. It’s a few streets away from the corniche so you can have a lovely stroll after. But it’s the food that always brings me here! And the prices are great!

Gandofli (small clams) with butter and garlic, prawns in shells cooked in “khalata” a spicy tomato broth ( they serve you extra broth with that in a cup so no need to order soup!), batarekh (fish roe) salad, tasty and creamy, grilled Moussa (flat fish) and baked whole fish with potatoes and onions in a spicy sauce….delicious! Fresh bread to mop up the sauces or dunk in your broth, and excellent mint tea after. Perfect, just perfect!

Elbonn elbrazeelee is like a blast from the past. It’s been there since 1929, and still has that old world charm about it. You walk in and it seems as if you’re walking through a time warp! They even still have the old roasting machine though I doubt they use it! High ceilings too! The smell of fresh roasted coffee is beautiful. Elbonn elbrazeelee interior The barista hasn’t changed in God knows how many years! And the patrons are all regulars, smiling at you when you walk in and chatting away, men in suits besides men in jalabeyas, all sipping away…a sight you rarely see. No fancy Starbucks here, just simple, well roasted, well made coffee by a barista who cares! A lovely way to start off your morning!

Then we had to go back home :-(…back to Cairo we went and somehow it’s freezing cold! Windier and colder than alex! How’s that possible even! But the memory of the lovely hot coffee is warming me up 🙂

The side of Parfait is for hubby…breakfast parfait, dead easy to make and looks and tastes delicious, fresh berries, bananas, yogurt and granola…
